STEAMED FISH (BASA) WITH PICKLED CHILLI SAUCE
Ingredients
- 180 gm fish fillet
- 10 gm garlic
- 5 gm pickled chilli
- 15 ml Chinese wine
- 20 gm spring onion
- 3 gm salt,
- 5 ml sesame oil
- 2 gm sugar
- 10 gm corn flour
- 10 gm pakchoy
- 10 gm Chinese mushroom
Method:
Clean fish fillet and cut it into 5-6 equal pieces.
Arrange it on plate with mushroom and pakchoy.
Steam it for 10 minutes.
Heat oil and saute garlic, spring onion and pickled chilli.
Add seasonings and stock.
Thicken it with corn flour dissolved in water.
Pour the steaming hot sauce over the fish.
Garnish with spring onion and serve.
