Watermelon Margaritas


Ingredients:
2 tsps sugar
2 fresh limes, cut in half
4 cups of seedless watermelon,
cut in 2-inch chunks
2 tbsps sugar
1/2 cup tequila
1/4 cup orange-flavoured liqueur,
such as Grand Marnier or Triple Sec
Lime wedges, for garnish
Watermelon balls, for garnish
Serves 6

Procedure:
Place 2 teaspoons sugar in a small dish. Rub rim of margarita glasses with 1 cut half of lime, and then roll glasses in sugar to coat. Place prepared glasses in the freezer until ready to serve drinks.
Combine juice of limes, watermelon, 2 tablespoons sugar, tequila and orange-flavoured liqueur in a blender and process until smooth. Fill blender with ice cubes and process until mixture is a slush consistency. Fill prepared glasses with margaritas; garnish each glass with a lime wedge and watermelon balls on a skewer and serve immediately.


Watermelon Salad with Celery-Nut Dressing


Ingredients:
4 ounces cream cheese, softened
2 tablespoons mayonnaise; 1/3 cup heavy cream, whipped
1 1/3 cups celery, thinly diced
3 cups watermelon balls, chilled
Bright green lettuce leaves; 1/2 cup pecans chopped

Procedure:
Beat cream cheese with mayonnaise until smooth and fluffy. Fold into whipped cream; add celery. Arrange watermelon on salad greens and top with celery-cheese dressing. Sprinkle with chipped pecans. Serves 6.


Watermelon Breakfast A Go Go


Ingredients:
In a large, cylindrical glass create the following parfait:
Bottom Layer: Low fat granola or cornflakes or rice crispies.
Next Layer: Small chunks of seedless watermelon.
Next Layer: Low fat banana yogurt.
Next Layer: Low fat granola.
Next Layer: Small chunks of seedless watermelon.
Top Layer: Low fat banana yogurt.
Garnish: A slice of banana, toasted almonds or coconut, and chunks of watermelon.


Starfruit Watermelon Slush


Ingredients:
1-1/2 cup seeded watermelon, diced
1 starfruit (diced)
8-10 ice cubes; 1 tsp fresh lemon juice
4-5 sprigs fresh basil (chopped)
Serves 2

Procedure:
Place all the ingredients in a blender. Blend until smooth. Pour in glasses. Serve immediately.


Quick Quick and Easy Watermelon Pie


Ingredients:
1 can sweetened condensed milk; 1/4 cup lime juice
2 cups watermelon balls
4 ounce refrigerated non-dairy whipped topping,
thawed; 1 9-inch cheese cracker crust

Procedure:
Fold together milk and topping. Add lime juice. Fold in watermelon balls, reserving about 5 balls for a garnish. Pour into cheese cracker crust. Place remaining watermelon balls on pie to garnish. Chill for 2 or more hours before serving.


Watermelon yogurt Smoothie


Ingredients:
2 cups seeded watermelon chunks
1 cup cracked ice
1/2 cup plain yogurt
1-2 tbsps sugar
1/2 tsp ground ginger
1/8 tsp almond extract

Procedure:
Combine all ingredients in blender container. Blend until smooth. Makes 2-3 servings.


Watermelon Gazpacho
Surprise your family or guests with this spicy, not sweet, soup! A garnish of thin apple slices adds a special touch.


Ingredients:
6 cups cubed seeded watermelon
1 1/2 cups chopped
delicious apples
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1 tsp dried basil
1/2 tsp salt
1/4 tsp coarsely ground pepper
1/4 tsp chilli powder
1 tbsp cider vinegar

Procedure:
In blender, puree watermelon; pour into large mixing bowl. Stir in remaining ingredients. Refrigerate, covered, at least 1 hour to blend flavours. Makes 4 servings. Per serving: 114 calories; 27g carbohydrate; 2g protein; 1g fat; 3g fibre; 298mg sodium
